Car Seat Mania...HELP!

Today I decided to try and install the infant car seat that we have in my car. I didn't realize that I was going to have such an issue! 

I have a cadillac srx crossover, and my car only has the latch system behind the passenger seat or the driver seat. If you want to install it in the middle, you have to use the seat belt system, or latch onto each side, which my car manual then says...certain safety belts can't be used in each side (behind the driver and passenger)? Not really a big deal since this car seat is the only car seat that will be in the car, I just dont know how it effects regular adult passengers from using the seat belts? 

I know that the middle is suppose to be the safest, but I also have a cupholder that pulls down, which I heard then messes with the theory that "middle is best."

I seriously feel stressed, and don't know where to attach the thing to make it the most convenient and safest for baby. I know a lot of it is personal preference, but what would you do?
