MSPI weaning?

My plan is to continue nursing for 1 year, but I'm just curious...any MSPI ladies weaned and how? LO tolerates soy in my diet but not dairy so far. My ped wants to try dairy again at 6 mo. Supposing she doesn't tolerate dairy, do people just start coconut or almond milk at 1 year? Should I try soy formula? I don't really want to do elemental due to the expense. Sadly, I'll be working 80 hrs a week starting in July so there will be limited time for pumping/nursing. TIA!
