Three pumping/bottle questions

I want to start giving DS bottle at night to get him used to it.  These questions might be stupid but I just don't know the answers so TIA for your answers!!

 

1. Connor is almost 2.5 weeks.  How many ounces should I give him at a feeding?  Is there a resource I can find some kind of chart for this as he grows?

2. I feel like I hold the bottle wrong when I give it to him.  He literally takes it down in minutes (2ozs generally) and doesn't stop himself.  I feel like he is going to choke.  Do I stop him?  I don't want to tilt the bottle because I'm afraid of how much air he will inhale...

 3. Do I ever clean the tubing on the medela PISA?
