Rec your cookware!

DH does all the cooking and could use some new cookware. I want to get him something nice for his birthday next month, but am not sure the way to go. Please rec your cookware and let me know why you chose it, how it's held up, etc. And, please let me know if there are certain brands/lines to stay away from. Thanks!
