Good foods for toddler without teeth?

My 13 month old has two canines, and that's it! He loves fruit and I give him bananas, berries, apples slices (which he just sort of sucks on), sliced watermelon and pineapple and mango, etc. I also give him avocados, scrambled or hardboiled eggs, cheese, etc. 

We still spoon feed him things too, and depending on what DH and I are eating for dinner, we'll either cut it up so he can eat it or puree it.  But for his daytime meals and snacks, I feel like we're in kind of a rut when it comes to foods he can feed himself without teeth and am looking for other things to give him that I don't have to sit down and help him out with. He eats so much fruit, which I know is good for you, but I am worried about getting other nutrients into him and about the amount of sugar. 

What other things do you feed your LO during the day that don't require too much chewing?
