Ready to wean

I figured you ladies would be of some help. I have no idea where to start, really.

My daughter is 19 months and we co-sleep. My DH works OOT for 28 days at a time, so I have no one to help with getting her down to sleep at night. She is currently nursing to sleep at naptime and bedtime. If we are at home during the day, she would nurse constantly if I let her. She eats solid foods really well but will gag at the first taste of milk. I am really ready to start weaning her and would ideally like to be finished by the time her second birthday rolls around. How do I begin this process?
