What to do with stash

DS is 3 months old. I have about 2,000oz stashed from the first 2 months (before I went back to work, I'm only able to put away one bag every few days now). The chart I received from Gerber says breastmilk is good in the deep freezer for 6-12 months. That's a pretty big range...so, when do you consider it "bad" if it has been in a deep freezer from day one?

If 6 months is the answer, then my 2,000oz is about halfway through it's shelf life. Should I start using my stash and putting away the fresh milk instead of using the fresh milk throughout the day? The issue with this is that I've just started cutting out caffeine and it seems to be helping with his fussy periods, so my 2,000 frozen ounces are full of caffeine and if possible, I'd rather wait to use it until he's a little older/can handle it better. Or will it be okay until he's about 8 months old (when I plan on weaning off the pump and using my frozen stash)?
