How to drop a pump?

I'm most breastfeeding with a random pump once or twice a day. My baby goes to sleep at 8pm with a bottle of Brest milk then we eat dinner and have wine etc. after that I pump and dump just to not be engorged until 3am feed. How do I drop this pump? Without being crazy engorged? Bf experts please help...
