emptying one breast vs timing each

My LC instructed me early on to have my lo nurse for 15 mins on each breast. This seems to be just the right amount of time....sometimes she takes more or less. If she's still hungry after 15 mins of course I have her continue to nurse on the second side. But I'm seeing that many of you empty one breast and then offer the second, so I'm wondering if that's the right way to go to make sure lo is getting enough hind milk. But if I do that now won't my other breast become engorged or will I mess up my supply? Do your boobs end up lopsided? The rule follower in me wants there to be just one way to breast feed...black and white!
