Oversupply and pumping?

A short backstory: We are trying to figure out if LO is MSPI, but also identified that I have an oversupply. I was pumping the opposite breast after the morning feed but stopped about 2 weeks ago to try and get the oversupply under control. Right now I am block feeding, doing 2 feeds off each side before switching.

I'd like to start pumping again at some point to build a modest freezer stash, since my existing one is from when I was eating dairy and soy. I've been on the MSPI diet for 3 weeks, so I think it should be out of my system.

When is it safe to start pumping again? since I'm block feeding, how do I incorporate pumping into this, and do I pump to empty? This morning my left side was very engorged and I pumped 2oz in about 2 minutes and it is so watery. Should I even feed LO this watery milk I pumped?
