Weaning question

I'm not even close to weaning DS yet (he's only 7 months old) but I'm just curious how you do it? I'm not interested in baby-led weaning and I want to wean not too long after 12 months. But how do you do it? Do you go from 4 nursing sessions (that's where I'm at with DS) down to none in a matter of days? And also, I do eat, play, sleep with DS and the very first thing he wants when waking is to nurse. He will fuss until he is fed. So will he outgrow that or will he just be more easily distracted by that age? Sorry for all the questions, I've just been wondering lol.
