And as it turns out, I have TONS more food in there than I thought I did for after Baby's arrival!
- 1.5 qt vegetable beef lasagna
- 1.5 qt black bean (and chicken) tortilla casserole
- 9x9 pan of beef & spinach stuffed shells
- 1.5 qt cheesy chicken and wild rice casserole
- chicken/corn/black beans for 10 quesadillas (two nights of meals)
- Squash soup for 4-5 nights of meals
- Red beans for red beans and rice (2 nights worth)
Plus tons of various easy to throw together stuff: chicken pot pie, chili, spaghetti, garlic bread... I'm also making a triple batch of chicken filling for chicken lettuce wraps today (I already had the chicken and mushrooms, so all I needed was water chestnuts and I'm adding shredded carrot for some extra veg!)
