how much milk to store in a bag?

Few questions for you ladies. I really don't know how much my son is eating per feeding since I exclusively breastfeed him. He also doesn't have a good schedule of meals set in place..Sometimes he's getting hungry after just an hour or so sometimes he goes 3 hours without eating but in average I would say he is eating every 2 hours... Recently I started pumping to be able to store for when I will start working. Usually I pump 6- 6.5 oz at a time.. .

How much should I store in a bag...He is 2 months old now and 11 lb already. How much is the average intake of milk per feeding for a baby this age, from your experience?

Do you freeze in the same bag  milk from 2 pumping sessions if they are from the same day?

What if I defrost a bag and he doesn't eat it all?...would you put it in the fridge and warm it again later  ?

I try to avoid throwing away milk as much as possible.
