Occasional pumping question

LO is EBF and almost 4 weeks old.  We are currently dealing with oversupply so I don't want to start pumping yet but would like to start sometime after he's 6 weeks (if oversupply is corrected).

I bought a Medela Harmony (manual pump).

I would like to pump a few bottles so that my mom can babysit him a few times (one day/night here and there).  I also have 2 weddings this summer and will be away from LO for about 24hours for each one.  The weddings are in June and August.

LO currently only feeds on one breast at a time.  So my plan was to pump the other breast after first morning feed.  I feel that if I pump daily I will have way too much frozen breast milk for my needs so I was wondering if I could pump maybe 3 times a week instead.  Is that possible?  Or is it best that I pump daily in order to regulate my supply?  TIA
