Growth spurt? Reflux? Hungry? What is it?

My 5 week old lately has been like this:

He nurses every 2-ish hours (unless napping/sleeping) and often pulls away and makes gagging/coughing/can't catch his breath sound.

As of late when he stops eating I burp him and put him down and he loses it. He screams like he's dying.

He doesn't really stop unless he's being held or he's eating. It makes me think he's starving and he just wasn't finished eating.

He shows many signs of reflux but I'm not a doctor so...

Also, my dairy intake is very minimal. Milk in coffee/tea, a slice of cheese on a sandwich (okay fine I ate about 984757 holiday cookies)...

I'm at wit's end. I just can't figure it out! I keep crying on and off because I feel so so so bad for my boy.
