Different pumps, different milk?

I pump almost exclusively, and I use two different pumps -- a Medela Symphony hospital rental (downstairs, daytime use) and an Avent double electric (bedroom, nighttime use). The milk I get from the hospital pump is always a creamy yellowish color, and the milk from the Avent is always pure white, like cow's milk.

Which one is richer/better and contains more fatty hindmilk -- the white or the yellow? Are the different quality pumps responsible for the difference in the milk I'm getting, or is it a daytime/nighttime thing?

And finally, should I mix them to make sure my baby is getting the right balance throughout the day?
