What are your Holiday meal specialties?

I am thinking of brining our turkey this year, never done it in the past.  I am thinking of using a cooler and putting it in the garage overnight, I could never fit a 14lb turkey in a bucket in my fridge.  Who could?  And tips?  Favorite recipe?

DH also likes me to try to make something new and different when we host big meals.  He usually finds some big, fancy recipe in a magazine or something that includes uber expensive ingrediants, is time consuming and probably wouldn't be a hit anyway.  Plus my BIL is an expert chef, even though they rarely hot holiday meals, it is pretty near impossible to out cook him.  Anyone have any spectacular recipes they would like to share?
