Today is starting my diet (hardcore!) so, I definitely need to plan and stick to a menu this week!
- Monday: leftover chicken breast (from a "beer can" chicken we made last night, which was so good!) w/ steamed broccoli
- Tuesday: going to my parents, I think
- Wednesday: veggie quesadillas with black bean, corn and avocado salad
- Thursday: greek chicken salads w/ homemade whole wheat pitas
- Friday: some type of fish...swordfish, I think? (depending on what looks good at Wegmans), with pineapple mango jalapeno salsa, a veggie and quinoa
- Saturday: chicken sausages on homemade rolls (probably no roll for me!) and whatever veggie looks good from the market
- Sunday: bbq chicken burgers (minus the roll, for me), salad and baked sweet potatoes
