NBR: Kitchen countertops

We have slowly been finishing up our kitchen renovation.  We only have a little bit of trim work to finish in addition to new countertops, sink and backsplash.  We originally had picked out quartz countertops that we loved.  DH & I got to talking this weekend and thought that we could proabably get away with installing something cheaper, thus getting them sooner.  We installed new cabinets last year and are just using the old laminate countertops for now.

We bought this house as our forever home with no intentions of moving, barring any major job change for DH, which is VERY unlikely.  If we were looking at reselling at some point we would definitely spend the money on nicer countertops.  But we would be happy with something less expensive for ourselves.

What kind of countertops do you have?  How do you like them?
