What is your crockpot taco recipe?

DH has said before that he would eat tacos every night if he could. I make them weekly, but bet he would like to be surprised with another "taco" type dinner in the week.

Also: if you guys are big taco fans too, I made this a few weeks ago and we all enjoyed it.
