if you like Mexican flavors at all, this is super easy and yummy!

Basically, you add a few things to shredded chicken, roll them up in a corn tortilla, and bake. Really simple but surprisingly very, very good. I actually used flour tortillas because I made the chicken in the crockpot and we had tacos the night before. DH doesn't like corn tortillas with chicken tacos and I didn't want to buy double. I had leftovers for lunch (I nuked them because these were really filling and we didn't finish all of the baked ones last night) and they reheated very well. They weren't crispy, of course, after microwaving but the tortilla didn't get gummy at all.
For the chicken, I put 3 chicken breasts, a container of pico de gallo from the deli, a packet of chicken taco seasoning, 2/3c. water, and 2 TBSP of olive oil in the crockpot, cook on low for 6ish hours, then shred. Great for tacos and great for shredded chicken for lots of things!
