I just got the idea from the diabetic recipe post...

Little back story: My husband is on dialysis. He's not diabetic, he was born with a kidney condition which led to kidney failure/ruptures in his early twenties. He received a kidney from his mother which failed a few years ago. He is currently living with no kidney's & surviving on dialysis (thank God for insurance). 

Question: I have found a TON of dialysis friendly cook books recipes etc. But none of them are healthy for his condition because they all relate to diabetes. Sugar is one of the things he CAN have. He cannot have a lot of anything full of vitamins & nutrition. Does anybody know of ANY recipes or recipe books that pertain to his condition? I want to be able to cook him a meal that he will like & that he won't get sick off of
